Not denying the fact that regular coffee itself is truly special for the millions of its lovers around the world, but Specialty Coffee, is simply different from the rest. Also referred to as “gourmet” or “premium” coffee, it is usually a term associated with the top ranking coffee which is produced in special microclimates and is able to score 80 or more points on a scale of 100 as prescribed by different coffee associations around the world.
Specialty Coffees offer a variety of unique flavors and tastes which are developed because of difference in characteristics and compositions of the soil in which they are produced. They are distinguished due to their enriching taste and minimal defects and are grown in extremely special and ideal climates. Another interesting feature is that most of it is made from Arabica coffee beans that are grown at higher altitude levels. 
Most of the time, these coffees have different stories and fables associated with them based on the countries they originate from. This increases the uniqueness of the coffee and adds special value to their form. For example, Java, a word that has become so synonymous with coffee, is a popular type that gets it name from the Indonesian island of Java. It was cultivated by the Dutch colonists that settled there in the beginning of the 18th century and was exported in large quantities. 
Lately, the trade of specialty coffee has become one of the most rapidly growing and influential segment of the coffee industry. So to promote and regulate the business, many coffee growing countries have formed trade associations that consist of the main industry movers such as growers, exporters, roasters, retailers and equipment suppliers within their regions and countries. One example of the industry’s success is the U.S market, where its share has increased from 1 to 20 percent over the last 25 years. 
The boom and popularity gained by specialty coffee in the market has enabled certain underdeveloped regions of the world to gain prosperity. For example, the formation of Columbian Coffee Federation has enabled the region to promote rural community development such as increasing the infrastructure, providing better medical help and improving education conditions in the region.
